Crispy Peanut Butter Filled Chocolate Chip Cookies

Whether it’s for those 3 am cravings or the stress from work and life, these delicious cookies will fill your heart with love and warmth and wipe away your tears.
Here’s a little fun story behind this recipe: While making the cookies, I was going for a chewy and gooey chocolate chip cookie. I had all the ingredients ready and started preparing the dough, when it was time to add the flour I noticed that it seemed a little weird but I didn’t think much of it and mixed all the ingredients anyway. After I had finished mixing everything together, I realized that it wasn’t all-purpose flour and the texture was much different from how it was supposed to be. But thankfully it was not any kind of suspicious white powder but rice flour, phew. It was in a jar right next to the all-purpose flour. I was worried if I could make it work but decided to give it a shot. And to my joy, it turned out to be one of the most delicious cookies I’ve ever made. So I guess this can be an example of what Bob Ross would say “we don’t have mistakes. We just have happy accidents.” Now let’s get baking!
Ingredients
- Brown sugar: Light to medium-dark brown sugar
- Sugar: White sugar
- Butter: Melted, both salted and unsalted can be used
- Egg
- Rice flour
- Baking soda
- Salt
- Vanilla essence
- All-purpose flour
- Chocolate: chips or chunks
- Peanut butter
How to Make Peanut Butter Filled Chocolate Chip Cookies
Step 1: In a bowl, add brown sugar, white sugar, and salt.
Step 2: Add the egg, vanilla essence, and melted butter to the bowl as well.
Step 3: Whisk all ingredients together until the mixture is soft and creamy.
Step 4: Sift the rice flour, all-purpose flour, and baking soda into the wet mixture.
Step 5: Mix the wet and dry ingredients together until well incorporated.
Step 6: Add the chocolate chunks to the cookie dough and mix nicely.
Step 7: Cover the cookie dough with a plastic wrap and chill it in the fridge for an hour. Meanwhile, prepare a baking tray with parchment paper. Preheat the oven to 180 degrees celsius.
Step 8: After an hour, take out the dough from the fridge. Take a small portion from the dough and shape it into a round shape.
Step 9: Gently press on the center of the round dough with your thumb to form a well.
Step 10: Add enough peanut butter to fill the well (be careful not to overfill or underfill).
Step 11: Pinch in the side of the dough towards the center to cover the peanut butter filling.
Step 12: Use your fingertips to give the cookie a smooth texture on the outside.
Step 13: One by one prepare cookies with the rest of the dough. When placing the cookies on the baking tray, make sure to keep at least 5 cm to 6 cm gap around each cookie.
Step 14: Bake the cookies for 12 to 15 minutes.

Notes
Let the cookies cool down completely before serving. Even when they seem to have cooled down on the outside, the peanut butter may still be hot.
